The Best Chocolate Chip Cookies EVER

YOUR WELCOME. These are the best. Sorry, but they are. My hubby does almost all the cooking and I rarely do…but ask me to make chocolate chip cookies, cupcakes, cheesecake or lasagna….it is game over for you buddy. I win.

So without further ado, I introduce you to Mr. Chip.

I like my cookies barely turning golden brown on the bottom and nice and soft throughout. I have perfected the way to get these. Seriously perfected.

Are you ready????

Let’s Get Ready!

  • 2 cups of flour
  • 1/2 teaspoon baking soda
  • 1 cup (2 sticks) unsalted butter, softened/melted in the microwave
  • 1 1/4 cups packed light-brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract + a dash extra. Just a dash!
  • 2 heavy cups (more is okay), of chocolate chips. Type doesn’t really matter. I buy the ridiculous bag at costco


  1. Preheat oven to 350 degrees. Do this first. It is important. Get your eggs out on the counter now too.

  2. Whisk together the flour and baking soda. Make sure to whisk it so the baking soda gets incorporated.

  3. Soften your butter. I chop it up and put it in the microwave for about 30 seconds. I got over zealous below and melted a little too much.

  4. Using an electric mixer fitted with the whisk, combine the butter with both sugars. Mix until it is combined well and moist.
  5. Reduce speed to low; add the salt, vanilla, and 1 egg.  Beat until well mixed, about 1 minute. Add second egg.

  6. Add flour mixture; mix well. No need to over mix. Once everything is combined you are good to go.

  7.  Mix in chocolate chips. Your mixer will go crazy for a second but mine always survives. Magical looking right?                               
  8. Put parchment paper on cookie trays and put smallish golf ball size heaps of the deliciousness on the sheet.                                   

Only a few more steps…

9.                  Put the trays in the oven and set the timer for 7 minutes. Every oven is different. Sometimes my first batch needs up to 2 more minutes. I check at 7 minutes. At 7 minutes mine weren’t quite ready to come out and the bottoms had no browning yet. I put them in for 1 more minute. I pulled two trays out and one tray needed one more minute. You are just wanting to pull them out when the bottoms have turned a nice golden brown. not brown brown. You want the tops to still look under done. Does this make sense?

10.                     Below, the cookies are perfectly cooked. They won’t look like this when you pull them out. They will still look similar to the picture above. I remove the parchment paper from the pans (just slide it off) so it doesn’t keep cooking. If they are just barely done you can let them sit there for a minute.

You will have enough dough for another tray of cookies. So now that your pan is hot, the 7 minutes should be perfect.

I give my husband the left over cookie dough. Yes, there is raw egg. Use discretion. I am not advising you do this…I am just informing you of my husbands eagerness to eat raw egg in cookie dough 🙂Now you get to EAT. We usually pig out and have the left overs for breakfast. They are some how even better in the morning.
